Delightful
It is rare that a cheap flimsy piece of plastic has such impeccable design. These things just WORK. It doesn’t matter that they’re cheap and flimsy because you can’t be rough with uncooked pies anyway, you don’t ever need to slam a pie closed with great force. The only bad thing about these is now my Caribbean patties look just like my empanadas look just like my Cornish pasties look just like my handheld apple pies because I refuse to close packets of dough with anything else anymore. I’m going to make giant raviolis now. The only time these will break is when you pry them out of my cold, dead hands.

Easy to use
I got these because I wanted to learn how to make empanadas. They worked very well and I popped them in the dishwasher on the top rack for clean up.

Hand pies
Made apple hand pies with these. They are cheap plastic so after a few your hands will hurt on the molds. But they work so YMMV

Works very well!
This is a set of dough presses in three graduated sizes. They measure 4, 5 and 6 inches in diameter. I personally use the most the largest one, with the 6-inch diameter, but the smaller ones also work well, depending on what I am making. I simply can’t put as much filling into the smaller ones. The largest one holds about 3 tablespoons of filling. These dough presses are a quick and easy way to crimp the edges of half-circle-shaped pastries such as Russian piroshki, Spanish/Portuguese empanada, a fruit-filled, hand pie, and Middle Eastern and Southeast Asian samosa (which technically is a half-circle that is hand-formed into a cone and ultimately a triangle shape, but I see no reason to not use this press—saves time!). The first steps for each of the above pastries are the same. You either create dough from scratch, making yeast bread, flat bread, or pie crust dough, or you purchase frozen, unbaked dinner rolls or frozen pie crust. You can roll out the dough and cut it to the size that fits the dough press, or you can press it into a flat, round shape by hand. I make my own dough, using a flatbread recipe for all of the above pastries except the empanadas. For that I make the dough using masa harina. Traditionally, in India, chickpea flour (AKA besan or chana besan) is used for samosas, but I haven’t gotten around to using that yet. I have tried both rolling out the dough and cutting it with a round, 6-inch-diameter, stainless-steel dough cutter that I own. It is also possible to use the bottom or outward side of these dough presses as a dough cutter, which will give you the exact size you need. After some experimentation, I have personally found that simply patting the dough into shape works best for me. I find it to be is faster and easier. For the 6-inch press I use 80 grams of dough, and that amount seems to give the ideal width and depth for the dough. I pat out the dough slightly wider than the press. I lightly oil the press to help prevent the dough from sticking to it, then I lay the shaped dough onto the press (see photo). I use a scoop to place the filling in the exact center of the dough (see photo). Then I smooth the filling into an oblong shape along the center of the dough (see photo). I slowly close the press, and push down on it to seal the edges. Then I very slowly open the press, carefully detaching the edges of the dough so that the two sides do not get pulled apart. When the press is open at about a 45-degree angle, I gently push the bulging center of the dough, which is sticking out of the opening where the press hinge is, forward and out of that opening. This is crucial because, when the press is fully open wide, that opening goes away, and you don’t want your dough stuck inside that crack. I hand wash these dough presses to extend their lifetime. They are made of sturdy plastic, but to me it isn’t worth taking the chance on them getting broken due their getting banged around and exposed to excessive heat in the dishwasher. All in all, this is a terrific little product!
